    Egg Noodles

There are Asian noodles made with eggs across all parts of Asia, typically as one of the primary ingredients in addition to the flour, such as wheat, and water. Eggs are added for many reasons: They are nutritious, they add to the binding quality of the noodles, they also make the dough silkier and more colourful. Egg Noodles are used in soups, stir-fries, spring rolls and just about any recipe that requires noodles. One of the most popular Asian Egg Noodles dishes is Chinese Lo Mein.

    Rice Noodles

Made from rice, flour and water rice noodles are one of the most popular types of Asian noodles. They come in many varieties and sizes and are often used in soups because of their subtle nature. Rice vermicelli are one of the most popular types of rice noodles, they are very thin and often used in stir fries and soups.

    Wheat Noodles

Two of the most popular types of Chinese wheat noodles are Chow Mein and Lo Mein. These are typically made with wheat flour, salt, water, and sometimes eggs and other flavorings. They are crafted into an endless variety of shapes and used in soups, stir-fries and spring rolls.

    Soba Noodles

Soba noodles are a Japanese noodles made from buckwheat, Soba noodles are generally thin and long in nature. They are used in all varieties of hot noodle broths and soups, and are also served chilled with a dipping sauce as in the illustration.

    Udon Noodles

Another in the long, illustrious and delicious assortment of Japanese noodles, Udon noodles, unlike Soba noodles, are thick and made from wheat flour. Udon noodles are typically used in a variety of soups and broths, but are versatile enough to also be used in stir fries and the Japanese hot pot.

    Glass Noodles

Glass noodles are a type of transparent noodle, Chinese in origin and made from starch, thus they’re “transparent” appearance. They are also known as Cellophane noodles. Glass Noodles can be made from the starch of mung beans, potatoes, sweet potato, tapioca, or canna. They are typically used in stir-fries, soups and spring rolls.
